Instructions (2/3):

Return the frying pan to the stove and add 2 tablespoons of olive oil. Toss in the chopped onion, seasoning with salt and pepper. Sauté for 5 to 7 minutes until the onion softens and becomes lightly caramelized. Next, add the reserved sardines, breaking them up gently. Cook for about 2 minutes, just enough to warm them through.

Instructions (3/3):

Introduce lemon zest, chopped parsley, crushed red pepper, and capers to the pan, then remove from heat and cover to keep warm. Meanwhile, cook the pasta according to the package instructions, reserving ½ cup of the cooking liquid before draining. Return the drained pasta to the pot and mix in the sardine mixture along with half of the reserved cooking liquid. Toss everything together, adjusting the seasoning as needed and adding more liquid if necessary.

  • 2 tablespoons of olive oil
  • 1 medium sweet onion, chopped
  • 1 teaspoon of fresh lemon zest
  • ¼ cup of chopped fresh parsley
  • ¼ teaspoon of crushed red pepper (optional)
  • 2 tablespoons of drained capers (optional)
  • Lemon wedges for serving
